Cassoulet is a regional specialty of Languedoc whose origin dates back to the Hundred Years' War. Toulouse, Carcassonne and Castelnaudary still fight for the paternity of this traditional dish par excellence. Cassoulet was a popular dish in the rural countryside that consisted of white beans or beans stewed with meat. Now it is prepared according to different regional recipes in the south of France.
