Snails

Historically, it is said that snails have been consumed since prehistoric times. But since then, the recipe has been elevated to the rank of traditional French and especially Burgundian gastronomic specialties. There are several species of Burgundy snails, the little gray, the gros-gris and the true Burgundy snail which is most often prepared in the shell with parsley butter.
