White pudding is a specialty of the Ardennes and Orne regions of France. Prepared with minced meat, egg, breadcrumbs, milk and onions, it was already consumed in the Middle Ages in the form of porridge. There are many varieties flavored with mushrooms, nuts or grapes. Black pudding is also a French specialty, its variant, Creole pudding, is a Christmas dish par excellence.
